Fried Cheese
Crispy golden breading with gooey melted cheese inside — a beloved Czech street-food snack, served hot with tangy tartar sauce and fried potatoes.
Ingredients
- hard cheese500 g
- egg2 pcs
- flour80 g
- salt1 to taste
- breadcrumbs150 g
- oil250 ml
- tartar sauce120 g
Instructions
Cut the cheese into thick slices or sticks about 1–1.5 cm thick and chill well in the refrigerator.
Set up three bowls: flour; eggs beaten with a pinch of salt; breadcrumbs.
Coat each piece of cheese first in flour (shake off the excess), then in egg, then in breadcrumbs.
For a thick double crust that will keep the cheese from leaking out during frying, dip the pieces once more in egg and breadcrumbs.
Arrange the breaded pieces on a plate and place in the freezer for 25–30 minutes — chilled breading holds together better and won't crack in hot oil.
Heat oil in a skillet over medium heat to about 170–180°C — there should be enough oil to submerge the cheese slices at least halfway.
Fry the cheese for 3–4 minutes on each side until evenly golden brown, turning gently so as not to damage the breading.
Transfer to a paper towel to drain excess oil, and serve immediately, hot, with tartar sauce.
