Turkish Lentil Soup

- red lentils250 g
- onion1 pcs
- carrot1 pcs
- tomato paste1 tbsp
- ground cumin1 tsp
- paprika1 tsp
- olive oil2 tbsp
- lemon1 pcs
- water or broth1200 ml
- salt1 to taste
- fresh mint10 g
Instructions

Rinse the lentils well and finely chop the onion and carrot.

Sauté the onion and carrot in oil for 5 minutes in a pot.

Add tomato paste, cumin, and paprika and cook for 1 minute.

Add the lentils, pour in water or broth, and bring to a boil.

Cook for 20–25 minutes until the lentils are very soft, then blend until smooth.

Season with salt, add lemon juice, and serve with mint or chili flakes.
