Tarhana Çorbası
A traditional Turkish soup made from fermented tarhana, finished with a fragrant butter, dried mint, and red pepper drizzle.
Ingredients
- dried tarhana50 g
- water800 ml
- salt6 g
- butter27 g
- dried mint1.3 g
- ground red pepper0.7 g
Instructions
Dissolve the dry tarhana in 200 ml cold water, stirring thoroughly so no lumps remain.
Add another 600 ml water, stir in the salt, and pour the mixture into a saucepan.
Bring the soup to a boil over medium heat, stirring constantly so the tarhana doesn't settle on the bottom.
Lower the heat and simmer for 10 minutes, stirring occasionally, until the soup is smooth and slightly thickened.
Meanwhile, melt the butter in a small skillet. Add the dried mint and ground red pepper, stir a few times, and remove from heat immediately.
Pour the spiced butter into the hot soup, stir, and serve at once.
