Tostada with Anchovies and Roasted Peppers
A crispy Spanish toast with salty anchovies, sweet roasted peppers, garlic and olive oil.
Ingredients
- bread4 slices
- roasted red pepper200 g
- anchovies in oil6 fillet
- olive oil2 tbsp
- garlic2 cloves
Instructions
Drain the roasted peppers of excess liquid and cut them into wide strips so they sit neatly on the bread.
Toast the bread slices on a grill or dry skillet over medium heat until golden and crisp on the outside but still soft inside.
While the bread is still hot, rub each slice with a cut garlic clove.
Arrange the bread on plates and drizzle evenly with olive oil.
Lay the roasted pepper strips on each slice, without piling them too thickly.
Top each slice with three anchovy fillets, cutting long fillets in half if needed.
Serve the tostadas immediately, while the bread is still crisp.
