Red Lentil Soup
A smooth, warming soup made from red lentils, vegetables, and spices.
Ingredients
- Red lentils250 g
- Onion1 pcs
- Carrot2 pcs
- Garlic3 cloves
- Broth or water1200 ml
- Ground cumin1 tsp
- Turmeric0.5 tsp
- Lemon1 pcs
- Olive oil2 tbsp
- Salt1 to taste
- Cilantro15 g
Instructions
Dice the onion and carrot, then saute them in oil for 5 minutes.
Add the minced garlic, cumin, and turmeric, then cook for 1 minute.
Add the rinsed red lentils and pour in broth or water at about a 1:3 ratio.
Bring to a boil, reduce the heat, and cook for 20 minutes until the lentils break down.
Blend the soup with an immersion blender to your preferred consistency.
Finish with lemon juice and salt, then serve with crusty bread and cilantro.
