Ecuadorian Llapingachos
A popular ecuadorian home-style dish with potatoes, cheese, peanut sauce, well suited for a family weekly menu.
Ingredients
- Potatoes900 g
- Cheese250 g
- Peanut sauce200 g
- Eggs4 pcs
- Avocado1 pcs
- Oil3 tbsp
- Salt1 to taste
- Black pepper1 to taste
- Butter30 g
Instructions
Boil the potatoes until tender, drain, and mash them.
Add fried onion, salt, pepper, and a little butter.
Shape the mash into patties, place cheese in the center, and seal.
Chill the patties for 15-20 minutes so they hold together.
Fry on both sides until golden.
Serve with peanut sauce, egg, salad, or sausage.
