Arroz con Gandules

Ingredients

  • Rice350 g
  • Pigeon peas250 g
  • Sofrito120 g
  • Tomato sauce150 g
  • Olives60 g
  • Broth700 ml
  • Black pepper1 to taste
  • Garlic2 cloves
  • Tomato paste2 tbsp

Instructions

Rinse the rice until the water runs clear.

Saute onion, garlic, and pepper in a pot until soft.

Add pigeon peas, tomato paste or sofrito, and spices; cook for 2 minutes.

Add the rice, stir, and pour in hot water or broth.

Cook covered over low heat for 18-20 minutes.

Rest for 10 minutes, fluff with a fork, and serve.
