Schweinebraten

German roast pork with pan gravy.

Ingredients

  • Pork shoulder or neck1200 g
  • Onions2 pcs
  • Carrots2 pcs
  • Beer or broth500 ml
  • Caraway seeds1 tsp
  • Garlic3 cloves
  • Salt1 to taste
  • Black pepper1 to taste

Instructions

Rub pork with salt, pepper, garlic, and caraway.

Cut vegetables into large pieces and place in a roasting pan.

Place the meat on top and pour in a little beer or broth.

Roast at 180°C for 1.5–2 hours, basting occasionally.

Rest the meat for 15 minutes; strain and reduce the juices into gravy.

Serve with dumplings and cabbage.
