Warsaw-Style Tripe Soup
A traditional Polish spiced soup made with beef tripe and vegetables.
Ingredients
- Cleaned beef tripe700 g
- Beef broth1500 ml
- Carrots2 pcs
- Celery2 стебла
- Onion1 pcs
- Butter30 g
- Flour1 tbsp
- Marjoram1 tsp
- Salt1 to taste
- Black pepper1 to taste
- Parsley15 g
- Paprika1 tsp
- Nutmeg0.25 tsp
- Fresh ginger1 tsp
- Water500 ml
Instructions
Rinse the prepared tripe well, cover with water, boil for 10 minutes, then drain.
Cover the tripe with broth and simmer for 1–1.5 hours until tender.
Cut carrot, celery, and onion into thin strips and add them to the soup.
Season with marjoram, ginger, nutmeg, paprika, salt, and pepper.
For thickness, make a light roux with butter and flour, stir it into the soup, and cook for 5 minutes.
Serve very hot with bread and fresh parsley.
