Ingredients

  • Beets3 pcs
  • Kefir700 ml
  • Sour cream150 g
  • Cucumber1 pcs
  • Radishes6 pcs
  • Eggs4 pcs
  • Dill20 g
  • Spring onion20 g
  • Salt1 to taste
  • Black pepper1 to taste
  • Lemon1 pcs

Instructions

Boil or roast the beets until tender, then cool and grate them.

Dice or julienne the cucumber and radishes.

Mix kefir, sour cream, beets, cucumber, radishes, and herbs.

Add lemon juice, salt, and pepper, adjusting the acidity.

Chill the soup for at least 1 hour.

Serve with a halved boiled egg and dill.
