Puerto Rican Mofongo

A popular puerto rican home-style dish with green plantains, garlic cloves, pork cracklings, well suited for a family weekly menu.

Ingredients

  • Green plantains4 pcs
  • Garlic cloves4 cloves
  • Pork cracklings150 g
  • Olive oil3 tbsp
  • Broth150 ml
  • Shrimp or chicken300 g
  • Salt1 to taste

Instructions

Peel the plantains and cut them into thick rounds.

Fry the plantains in oil until tender and lightly golden.

In a mortar or bowl, mash garlic with salt and pieces of pork cracklings or bacon.

Add the hot plantains and mash them into the garlic and fat.

Shape the mixture into balls or a mound, adding a little broth if needed.

Serve mofongo with meat gravy, shrimp, or salad.
