Racuchy with Apples
Fluffy Polish apple pancakes made with yeast or kefir batter.
Ingredients
- Flour300 g
- Milk250 ml
- Dry yeast5 g
- Egg1 pcs
- Apples2 pcs
- Sugar3 tbsp
- Oil for frying4 tbsp
- Powdered sugar30 g
- Salt1 to taste
- Cream150 ml
- Sour cream100 g
Instructions
Dissolve yeast and a spoonful of sugar in warm milk; rest for 10 minutes.
Add flour, egg, remaining sugar, and salt, then mix a thick batter.
Peel the apples and slice thinly or grate them.
Fold the apples into the batter and let it rise for 30 minutes.
Fry small pancakes over medium heat for 2–3 minutes per side.
Serve warm with powdered sugar or sour cream.
