Soak the white beans overnight, then boil until completely tender.

Drain, reserving some cooking liquid to adjust the texture.

Add garlic, salt, and some oil, then blend the beans into a smooth puree.

Slice the onion into half-rings and fry in oil until golden.

Add paprika to the onion and stir quickly.
