Ingredients

  • Eggplants2 pcs
  • Bell peppers2 pcs
  • Onion1 pcs
  • Canned tomatoes400 g
  • Tomato paste2 tbsp
  • Oil2 tbsp
  • Salt1 to taste

Instructions

For Zacusca, cut eggplants, bell peppers, onion, canned tomatoes and tomato paste into serving pieces.

Brown eggplants, bell peppers, onion and canned tomatoes lightly.

Add onion and cook for 3-5 minutes.

Pour in oil and add the ingredients.

Simmer gently until tender and the sauce is thick.
