Balkan Stuffed Peppers

Tender sweet peppers filled with a juicy pork-and-beef rice stuffing, slowly simmered in a rich tomato sauce.

  • sweet bell pepper4 pcs
  • minced pork and beef500 g
  • white long-grain rice80 g
  • onion1 pcs
  • garlic3 cloves
  • egg1 pcs
  • parsley1 tsp
  • sweet ground paprika0.5 tsp
  • salt for the filling0.5 tsp
  • ground black pepper for the filling0.5 tsp
  • olive oil1 tbsp
  • wheat flour2 tbsp
  • tomato puree700 ml
  • water300 ml
  • bay leaf1 leaf
  • sugar1 tsp
  • salt for the sauce0.5 tsp
  • ground black pepper for the sauce0.25 tsp
  • mashed potato for serving500 g

Rinse the rice until the water runs clear, then boil it in boiling water for 8 minutes so it stays half-cooked; drain in a sieve and let it cool.

In a bowl, combine the ground meat, half-cooked rice, finely chopped onion, minced garlic, egg, parsley, sweet paprika, salt and black pepper. Mix by hand until evenly combined.

Cut the tops off the sweet peppers along with the stems, remove the seeds and membranes, but keep the peppers whole. Fill them with the stuffing to about 1 cm below the rim, leaving room for the rice to expand.

For the sauce, heat the olive oil in a deep pot, add the wheat flour and cook for 1 minute until light golden.

Pour in the tomato puree and water, add the bay leaf, sugar, salt and black pepper. Bring the sauce to a boil, stirring until smooth.

Stand the stuffed peppers opening-side up in the sauce, cover the pot with a lid and simmer over low heat for 45 minutes, occasionally spooning sauce over the tops.

Remove the pot from the heat, let the peppers rest covered for 10 minutes, then serve with the tomato sauce and mashed potatoes.
