Githeri

Ingredients
- corn300 g
- red kidney beans300 g
- tomato300 g
- onion1 pcs
- garlic3 cloves
- leaf cabbage300 g
- salt1 tsp
- black pepper0.5 tsp
Instructions
Rinse the legumes and soak them ahead if needed; simply drain canned beans.
Cook the onion, garlic, peppers, or tomatoes until soft.
Add Corn, Red kidney beans, Tomatoes, Collard greens and stir into the aromatic base.
Pour in the water, broth, or coconut milk from the recipe and simmer until tender.
Mash part of the beans if you want a thicker texture.
Serve Githeri hot as a main dish or with rice or flatbread.
