Liptauer
A tangy Austrian cheese spread with paprika, caraway, capers and crunchy add-ins, served on rye bread.
Ingredients
- quark250 g
- mayonnaise1 tbsp
- onion0.5 pcs
- pickled cucumber1 pcs
- capers1 tbsp
- garlic3 cloves
- parsley2 stalks
- cumin0.5 tsp
- mustard1 tbsp
- sweet paprika1 tbsp
- salt1 to taste
- black pepper1 to taste
- rye bread4 slices
- green onion2 stalks
Instructions
Take 250 g of quark and 1 tbsp of mayonnaise out of the fridge and let them come to room temperature.
Finely chop 0.5 onion, 1 pickled cucumber and 2 parsley stalks; crush 3 garlic cloves.
Grind 0.5 tsp caraway seeds in a mortar to release their aroma.
Beat the quark and mayonnaise together until creamy, then stir in the onion, cucumber, capers, garlic, parsley and caraway.
Add 1 tbsp mustard and 1 tbsp sweet paprika, season with salt and black pepper to taste, and mix until smooth.
Cover the bowl and chill the Liptauer for at least 2 hours to let the spices and vegetables infuse.
Before serving, stir the spread, spoon it onto 4 slices of rye bread and garnish with 2 stalks of spring onion.
