Moldovan Plăcintă with Potato

Thin, golden plăcintă filled with a juicy mixture of raw potato and onion, pan-fried under a lid until tender inside with a crisp crust.

Ingredients

  • wheat flour400 g
  • water225 ml
  • vegetable oil60 ml
  • potato500 g
  • onion1 pcs
  • salt1 to taste
  • ground black pepper1 to taste

Instructions

Mix 225 ml water, half the oil and the salt. Gradually add the flour and knead into an elastic dough; knead for 15 minutes. Cover and let rest for 20 minutes.

Peel the potatoes and cut into very small dice, then let any excess liquid drain off. Finely chop the onion.

Combine the potato and onion, and season with salt and black pepper.

Divide the dough into 8 pieces. Roll each one out thinly, brush with oil, and place the filling in the center.

Make 8 cuts around the edge, then stretch out the resulting flaps and fold them over the filling toward the center, overlapping every other one. Pinch the edges to seal.

Heat a skillet, pour in the oil and place the plăcintă seam-side down. Fry over low heat, covered, for 7–9 minutes.

Flip and fry for another 5–7 minutes, covered, until golden brown. Cook the remaining plăcintă the same way and serve hot.
