Pljeskavica

Juicy thin Serbian meat patties made from beef, pork and lamb, grilled and served with onion, ajvar and lepinja.

Ingredients

  • beef mince300 g
  • minced pork200 g
  • minced lamb200 g
  • onion2 pcs
  • garlic3 cloves
  • ground sweet paprika1 tbsp
  • ground hot paprika0.5 tsp
  • salt1.5 tsp
  • black pepper (ground)0.5 tsp
  • sparkling water60 ml
  • lepyoshka4 pcs
  • ajvar200 g

Instructions

In a large bowl, combine the ground beef, pork and lamb. Add the finely chopped onion, minced garlic, ground sweet paprika, ground hot paprika, salt and black pepper.

Pour in cold sparkling water and quickly knead the meat mixture by hand until evenly combined, without overworking it.

Cover the bowl and refrigerate the mixture for 5 hours to let it firm up and develop flavor.

Divide the chilled mixture into 4 portions, shape into balls, then flatten into very thin round patties about 16–18 cm in diameter.

Heat a grill or a cast-iron skillet until very hot. Place the patties on the dry hot surface without oil.

Grill each patty for about 7 minutes per side, until well browned on the outside and fully cooked through inside.

Thinly slice the second onion and warm the lepinja breads on the grill for 30–60 seconds per side.

Serve the pljeskavica hot in the lepinja or on their own, topped with ajvar and raw sliced onion.
