
Proja with White Cheese
A moist Serbian cornbread with crumbly white cheese, a crisp crust and a tender crumb.
Ingredients
- corn flour300 g
- wheat flour120 g
- white cheese200 g
- eggs3 pcs
- plain yogurt250 ml
- sparkling water100 ml
- sunflower oil120 ml
- baking powder1 tsp
- salt1 to taste
Instructions
Preheat the oven to 200 °C. Grease a baking dish, about 20×30 cm, with some of the oil.
In a large bowl, combine the cornmeal, flour, baking powder and salt.
In another bowl, whisk the eggs, then whisk in the yogurt, sparkling water and oil until smooth.
Pour the wet mixture into the dry ingredients and whisk into a thick but pourable batter with no dry lumps.
Crumble the white cheese with a fork and fold it into the batter, leaving a few small chunks.
Pour the batter into the greased dish, smooth the top, and bake for 25–30 minutes at 200 °C, until the top is golden and a wooden skewer inserted into the center comes out dry.
Let the proja cool in the dish for 5–10 minutes, then cut into squares and serve warm with yogurt or soured milk.
