Sutlijash

A gentle Macedonian rice pudding, simmered in milk to a thick, creamy consistency and flavored with vanilla and cinnamon.

Ingredients

  • short-grain rice200 g
  • milk800 ml
  • sugar150 g
  • vanilla sugar10 g
  • ground cinnamon1 tsp

Rinse the rice several times until the water runs clear, then drain well.

Pour the milk into a heavy-bottomed pot, add the sugar, and bring to a boil over medium heat, stirring so the sugar dissolves.

Add the rice to the hot milk, stir, and lower the heat to a simmer.

Cook uncovered for 35–40 minutes, stirring often with a spatula, especially along the bottom, until the rice is fully tender and the pudding turns thick and creamy.

Add the vanilla sugar, stir in, and heat through for another 3–5 minutes; remove from the heat while the mixture is still a bit looser than desired, as it will thicken further as it cools.

Let the sutlijash rest in the pot for 10 minutes, then divide among 4 serving bowls and dust with ground cinnamon.
