Ingredients

  • dried white beans500 g
  • water2000 ml
  • onion2 pcs
  • dried red pepper2 pcs
  • bay leaf1 leaf
  • sunflower oil100 ml
  • garlic2 cloves
  • ground sweet paprika1 tbsp
  • salt1 to taste
  • ground black pepper1 to taste
  • dried mint1 tsp
  • fresh parsley15 g

Rinse 500 g dried white beans, cover with 1000 ml water and leave to soak for 8 hours.

Drain the water, cover the beans with fresh water, bring to a boil and cook for 2 minutes; drain this first water. Pour in 1000 ml fresh water, add 1 onion, 2 dried red peppers and a bay leaf, and simmer over low heat for 60–90 minutes, until the beans are tender but still hold their shape.

Preheat the oven to 200 °C. Remove the onion, dried peppers and bay leaf from the pot; reserve 300 ml of the cooking liquid and drain off the rest if there's too much.

Finely chop the second onion and sauté it in 100 ml sunflower oil for 7–8 minutes until soft. Add 2 minced garlic cloves and 1 tbsp sweet ground paprika, stir and cook for 30 seconds, taking care not to burn the paprika.

Transfer the beans to a clay pot or a wide baking dish, mix in the onion-paprika mixture, pour in the reserved 300 ml cooking liquid, and season with salt and ground black pepper to taste. Bake uncovered for 30–40 minutes, until a light crust forms on top but the beans don't dry out.

Let the tavče gravče rest for 10 minutes, sprinkle with 1 tsp dried mint and 15 g fresh parsley, and serve hot.
