South African Yellow Rice with Raisins
Fragrant golden rice with turmeric, cinnamon and sweet raisins — a traditional South African side dish for bobotie and curry.
Ingredients
- long-grain white rice300 g
- water500 ml
- seedless raisins75 g
- butter30 g
- sugar15 g
- ground turmeric1 tsp
- salt1 to taste
- cinnamon1 stick
Instructions
Rinse the rice in a sieve under cold water until the water runs almost clear, then drain well.
In a heavy-bottomed pot, combine the water, turmeric and salt and bring to a boil.
Add the rice, raisins, sugar and cinnamon stick; stir once, cover with a tight-fitting lid and cook over medium heat for 5 minutes.
Reduce the heat to low and cook covered for another 15 minutes, without stirring, until the rice has absorbed all the liquid.
Remove the pot from the heat and let the rice stand covered for 10 minutes to finish steaming.
Remove the cinnamon stick, add the butter, gently fluff the rice with a fork and serve hot.
