Peruvian Anticuchos

A popular peruvian home-style dish with beef heart or steak, aji paste, vinegar, well suited for a family weekly menu.

Ingredients

  • Beef heart or steak700 g
  • Aji paste2 tbsp
  • Vinegar3 tbsp
  • Garlic cloves4 cloves
  • Cumin1 tsp
  • Potatoes500 g
  • Salt1 to taste
  • Water500 ml

Instructions

Cook aji paste and potatoes in salted water until done, reserving a little cooking water.

Prepare the sauce: chop garlic cloves and warm in a pan.

Add beef heart or steak and garlic cloves and cook to the right tenderness.

Stir in vinegar and cumin and heat into a smooth sauce.

Combine the pasta or noodles with the sauce, adding a little cooking water for a creamy texture.

Serve immediately while hot.
