Gazpacho

Ingredients

  • Ripe tomatoes900 g
  • Cucumber1 pcs
  • Bell pepper1 pcs
  • Garlic clove1 cloves
  • Olive oil4 tbsp
  • Bread80 g
  • Sherry vinegar2 tbsp
  • Salt1 to taste

Instructions

Cut the tomatoes, cucumber, pepper, and onion into large pieces.

Soak the bread in a little cold water or tomato juice for a few minutes.

Blend the vegetables, bread, garlic, olive oil, and vinegar until smooth.

Season with salt and pepper and add a little cold water if needed.

Chill the soup for at least 1 hour.

Serve very cold with finely diced vegetables, herbs, and a drizzle of olive oil.
