Carbonada Criolla

Ingredients

  • Beef700 g
  • Pumpkin400 g
  • Potatoes400 g
  • Corn200 g
  • Peaches or dried apricots100 g
  • Broth1000 ml
  • Black pepper1 to taste
  • Bay leaves2 pcs
  • Salt1 to taste
  • Paprika1 tsp
  • Ground cumin1 tsp
  • Garlic2 cloves

Instructions

Cut beef into cubes, season, and brown in a pot.

Add onion, garlic, carrot, and pepper and cook until softened.

Add potatoes, pumpkin, corn, and tomatoes.

Pour in broth and season with paprika, cumin, and bay leaf.

Simmer until meat and vegetables are tender, adding peaches or dried apricots near the end.
