Patatas Bravas
A popular spanish home-style dish with potatoes, olive oil, tomato sauce, well suited for a family weekly menu.
Ingredients
- Potatoes800 g
- Olive oil4 tbsp
- Tomato sauce200 g
- Smoked paprika1 tsp
- Garlic cloves2 cloves
- Mayonnaise or aioli120 g
- Salt1 to taste
- Sugar1 tsp
- Lemon1 pcs
- Tomato paste2 tbsp
- Water500 ml
Instructions
Cut the potatoes into large cubes and parboil them in salted water for 5-7 minutes.
Dry the potatoes, toss with olive oil, and roast or fry until crisp.
For the sauce, fry the garlic, then add tomato paste or crushed tomatoes, smoked paprika, and a little chili.
Simmer the sauce for 8-10 minutes, season with salt, and add a pinch of sugar if needed.
If desired, make aioli from mayonnaise, garlic, and lemon juice.
Spoon the tomato sauce over the hot potatoes and serve with aioli on the side or on top.
