Beef Kharcho

A rich Georgian beef soup with rice, tkemali, walnuts, and spices.

Ingredients

  • Bone-in beef700 g
  • Rice80 g
  • Onion2 pcs
  • Walnuts80 g
  • Tkemali sauce3 tbsp
  • Tomato paste1 tbsp
  • Garlic4 cloves
  • Khmeli-suneli1.5 tsp
  • Cilantro25 g
  • Bay leaf2 pcs
  • Salt1 tsp

Instructions

Cover the beef with 2.5 L of water, bring to a boil, skim, and simmer for 1–1.5 hours.

Remove and slice the meat, then strain the broth.

Fry the onion with tomato paste and add it to the broth along with rinsed rice.

After 15 minutes, add the beef, tkemali, crushed walnuts, garlic, and khmeli-suneli.

Cook for another 10–15 minutes until the rice is tender and the flavor is deep.

Season with salt, add cilantro, cover, and let the soup rest for 10 minutes.
