Hummus
A smooth chickpea dip blended with tahini, lemon, and garlic.
Ingredients
- Dried chickpeas250 g
- Tahini60 g
- Garlic2 cloves
- Lemon1 pcs
- Olive oil3 tbsp
- Ground cumin1 tsp
- Paprika0.5 tsp
- Salt1 to taste
Instructions
Boil the chickpeas until very soft, or use canned chickpeas; reserve 100 ml of the cooking liquid.
Blend the chickpeas, gradually adding tahini, lemon juice, garlic, and olive oil.
Adjust the texture with the reserved chickpea liquid until creamy.
Season with salt and adjust the acidity with more lemon if needed.
Spread the hummus on a plate and drizzle with olive oil.
Sprinkle with paprika and cumin, then serve with lavash.
