Cypriot black-eyed beans with greens and lemon oil.

Ingredients

  • White beans300 g
  • Olive oil2 tbsp
  • Lemon1 pcs
  • Onion1 pcs
  • Leafy greens300 g
  • Salt1 to taste
  • Black pepper1 to taste

Instructions

Rinse white beans, onion and leafy greens; soak dry legumes and cook until tender.

Chop onion and saute until soft.

Add white beans, onion and leafy greens and pour in olive oil.

Simmer gently until thick.

At the end, stir in lemon and olive oil, then season with salt and pepper.

Serve hot.
