Estonian potato and barley mash with onion and bacon

Ingredients

  • Potatoes600 g
  • Pearl barley250 g
  • Bacon200 g
  • Onion1 pcs
  • Butter40 g
  • Water500 ml

Instructions

Rinse the pearl barley and soak it for 1-2 hours if possible.

Peel and dice the potatoes.

Cook the barley in water for 30 minutes, then add the potatoes.

Cook for another 20-25 minutes until everything is very soft.

Dice the bacon and onion and fry until browned.

Mash the potatoes and barley with butter and serve with the bacon and onion.
