Nasi Lemak
A popular malaysian home-style dish with rice, coconut milk, anchovies, well suited for a family weekly menu.
Ingredients
- Rice350 g
- Coconut milk400 ml
- Anchovies80 g
- Peanuts80 g
- Eggs4 pcs
- Cucumber1 pcs
- Sambal120 g
- Salt1 to taste
- Bay leaves2 pcs
- Sugar1 tsp
- Garlic2 cloves
- Fresh ginger1 tsp
Instructions
Rinse the rice and cook it in coconut milk and water with salt, ginger, and pandan or bay leaf.
Boil the eggs and cut them in half.
Toast peanuts until crisp and fry anchovies if included.
Slice the cucumber.
Make sambal by frying onion, garlic, and chili, then adding a little sugar and tamarind.
Serve coconut rice with sambal, egg, cucumber, peanuts, and anchovies.
