Pasta Amatriciana

A popular italian home-style dish with bucatini or spaghetti, guanciale or bacon, canned tomatoes, well suited for a family weekly menu.

Ingredients

  • Bucatini or spaghetti350 g
  • Guanciale or bacon150 g
  • Canned tomatoes400 g
  • Pecorino80 g
  • Chili flakes0.5 tsp
  • Salt1 to taste

Instructions

Cook bucatini or spaghetti in salted water until done, reserving a little cooking water.

Prepare the sauce: chop canned tomatoes and chili flakes and warm in a pan.

Add guanciale or bacon, canned tomatoes and chili flakes and cook to the right tenderness.

Stir in pecorino and heat into a smooth sauce.

Combine the pasta or noodles with the sauce, adding a little cooking water for a creamy texture.

Serve immediately while hot.
