Spinach Pkhali
A Georgian cold appetizer made with spinach, walnuts, garlic, and spices.
Ingredients
- Spinach500 g
- Walnuts120 g
- Garlic2 cloves
- Cilantro20 g
- Wine vinegar1 tbsp
- Khmeli-suneli1 tsp
- Pomegranate seeds30 g
- Salt0.75 tsp
Instructions
Blanch the spinach for 1–2 minutes, cool it, and squeeze out as much water as possible.
Grind the walnuts with garlic, cilantro, khmeli-suneli, and salt.
Add the spinach and vinegar, then process into a thick but not runny paste.
Taste and adjust the salt and acidity.
Shape into small balls or oval portions.
Garnish with pomegranate seeds and chill before serving.
