Portuguese Chickpea Spinach Soup

Simple soup with chickpeas, spinach, potatoes, and garlic

Ingredients

  • Canned chickpeas400 g
  • Spinach250 g
  • Potatoes600 g
  • Onion1 pcs
  • Garlic2 cloves
  • Vegetable broth900 ml
  • Salt1 to taste
  • Olive oil1 tbsp

Instructions

Dice the potatoes and chop the onion and garlic.

Saute the onion and garlic in olive oil for 3-4 minutes in a pot.

Add the potatoes and vegetable broth and cook for 15 minutes.

Add the canned chickpeas and cook for another 5 minutes.

Lightly mash or blend part of the soup to thicken it.

Add the spinach, warm for 1-2 minutes, season with salt, and serve.
