Aji de Gallina

Ingredients

  • Chicken breast600 g
  • Aji pepper or chili2 pcs
  • Bread100 g
  • Milk250 ml
  • Walnuts80 g
  • Parmesan60 g
  • Rice300 g
  • Garlic2 cloves
  • Egg1 pcs
  • Broth500 ml

Instructions

Boil the chicken until cooked, cool, and shred it; reserve the broth.

Soak bread in milk or broth, then blend or mash it.

Saute onion, garlic, and aji paste or mild chili until fragrant.

Add the bread mixture, walnuts, and some broth, then cook into a creamy sauce.

Add chicken and Parmesan and simmer until thick and smooth.

Serve with rice, potatoes, egg, and olives.
