Bulgarian white bean soup with vegetables and paprika

Ingredients
- White beans300 g
- Onion1 pcs
- Carrot1 pcs
- Canned tomatoes400 g
- Paprika2 tsp
- Mint10 g
- Broth or water800 ml
- Salt1 to taste
Instructions

Soak the beans overnight and cook until partly tender.

Dice the onion and carrot.

Saute the onion and carrot in a pot for 5 minutes, then add paprika.

Add tomatoes, beans, and broth or water.

Simmer for 40-50 minutes until the beans are tender.
