Cochinita Pibil
A popular mexican home-style dish with pork, achiote paste, orange juice, well suited for a family weekly menu.
Ingredients
- Pork1000 g
- Achiote paste3 tbsp
- Orange juice250 ml
- Limes2 pcs
- Red onion1 pcs
- Tortillas8 pcs
- Salt1 to taste
- Water500 ml
Instructions
Cook achiote paste and tortillas in salted water until done, reserving a little cooking water.
Prepare the sauce: chop red onion and warm in a pan.
Add pork and red onion and cook to the right tenderness.
Stir in orange juice and limes and heat into a smooth sauce.
Combine the pasta or noodles with the sauce, adding a little cooking water for a creamy texture.
Serve immediately while hot.
