Chicken in Green Curry

Ingredients

  • Chicken breast400 g
  • Green curry paste2 tbsp
  • Coconut milk400 ml
  • Eggplant1 pcs
  • Fish sauce2 tbsp
  • Thai basil10 g
  • Jasmine rice200 g
  • Sugar1 tsp
  • Oil2 tbsp

Instructions

Fry the green curry paste in oil for 1-2 minutes until fragrant.

Add the sliced chicken breast and cook for 5 minutes.

Pour in the coconut milk and season with fish sauce and sugar.

Add the sliced eggplant and Thai basil.

Simmer for 10 minutes until the chicken is cooked through.

Serve with jasmine rice.
