Georgian Red Bean Lobio

Ingredients

  • Dried red kidney beans300 g
  • Onion2 pcs
  • Walnuts80 g
  • Garlic3 cloves
  • Fresh cilantro30 g
  • Khmeli-suneli1.5 tsp
  • Ground coriander1 tsp
  • Oil2 tbsp
  • Wine vinegar1 tbsp
  • Salt1 tsp

Instructions

Soak the beans overnight, rinse them, and boil in fresh water until tender.

Finely chop the onions and fry them in oil until golden.

Lightly mash about half of the beans to thicken the dish.

Add the onions, crushed walnuts, garlic, khmeli-suneli, and coriander.

Simmer for 10–15 minutes, adding a little bean cooking liquid if needed.

Finish with vinegar, salt, and cilantro, then serve warm or at room temperature.
