Lomo Saltado

Peruvian stir-fried beef with onion, tomatoes, soy sauce, and fries.

Ingredients

  • Beef500 g
  • French fries400 g
  • Red onion1 pcs
  • Tomatoes2 pcs
  • Soy sauce3 tbsp
  • Vinegar1 tbsp
  • Garlic cloves2 cloves
  • Cilantro15 g
  • Rice for serving200 g
  • Salt1 to taste
  • Black pepper1 to taste

Instructions

Slice the beef thinly and season with salt and pepper.

Prepare the potatoes as fries or bake them until crisp.

Heat a skillet or wok very hot and sear the beef for 2–3 minutes until browned.

Add onion, garlic, and tomatoes and stir-fry for another 2 minutes, keeping the vegetables firm.

Pour in the soy sauce and vinegar and toss quickly.

Add the fries and cilantro and serve immediately with rice.
