Mercimek Koftesi

Cold lentil and bulgur patties with herbs.

Ingredients

  • Lentils250 g
  • Bulgur250 g
  • Onion1 pcs
  • Tomato paste2 tbsp
  • Parsley20 g
  • Lemon1 pcs
  • Olive oil2 tbsp
  • Black pepper1 to taste

Instructions

Boil red lentils until very soft, leaving some thick moisture.

Add fine bulgur to the hot lentils, cover, and let it swell.

Fry onion with tomato and pepper paste.

Mix lentils, bulgur, onion paste, spices, lemon, and herbs.

When cool, knead the mixture by hand.

Shape into elongated koftes and serve in lettuce leaves.
