- Feta200 g
- Olives100 g
- Olive oil2 tbsp
- Oregano1 tsp
- Barley rusk or crispbread150 g
- Salt1 to taste
- Dried oregano1 tsp
Instructions

Lightly moisten the barley rusk or Cretan bread so it softens without becoming soggy.

Grate or finely chop the tomatoes, season with salt, and mix with olive oil.

Spoon the tomato mixture onto the rusk.

Add crumbled feta or mizithra on top.

Sprinkle with oregano, add olives, and drizzle with more olive oil.

Serve immediately while the bread still has texture.
