Chicken Shkmeruli

Georgian chicken cooked in a creamy garlic milk sauce.

Ingredients

  • Whole chicken1200 g
  • Milk400 ml
  • Garlic8 cloves
  • Butter40 g
  • Oil1 tbsp
  • Salt1 tsp
  • Black pepper0.5 tsp

Instructions

Cut the chicken along the breastbone, flatten it, and rub with salt and pepper.

Fry the chicken skin-side down under a weight until browned.

Turn it over and cook until almost done over medium heat.

Mash the garlic with salt and mix it with milk and butter.

Transfer the chicken to a baking dish and pour over the garlic milk sauce.

Bake at 190°C for 15–20 minutes and serve with bread for the sauce.
