Bulgarian meatball soup with rice and yogurt thickening

Ingredients

  • Pork and beef mince500 g
  • Rice250 g
  • Eggs2 pcs
  • Onion1 pcs
  • Carrot1 pcs
  • Plain yogurt200 g
  • Broth or water800 ml
  • Salt1 to taste
  • Black pepper1 to taste

Instructions

Mix the mince with rice, egg, salt, and pepper; shape small meatballs.

Finely chop the onion and carrot.

Bring the broth or water to a boil and add the onion and carrot.

Drop the meatballs into the soup and cook for 20-25 minutes.

Whisk the yogurt with a little hot broth so it does not curdle.

Pour the yogurt mixture into the soup, warm without boiling hard, and serve.
