Huevos Rancheros
Mexican breakfast of eggs, tortillas, tomato salsa, and beans.
Ingredients
- Corn tortillas4 pcs
- Eggs4 pcs
- Canned beans200 g
- Tomatoes3 pcs
- Onion0.5 pcs
- Garlic clove1 cloves
- Chili0.5 pcs
- Cilantro15 g
- Lime0.5 pcs
- Salt1 to taste
Instructions
Chop the tomatoes, onion, garlic, and chili for a quick salsa.
Cook the salsa in a skillet for 5–7 minutes, season with salt, and add lime juice.
Warm the beans separately and mash them lightly with a fork.
Toast the tortillas in a dry skillet until pliable and lightly spotted.
Fry the eggs so the yolks remain soft.
Top the tortillas with beans, eggs, and salsa, sprinkle with cilantro, and serve.
