Arancini

Ingredients

  • Cooked risotto or rice500 g
  • Mozzarella150 g
  • Eggs2 pcs
  • Breadcrumbs150 g
  • Flour80 g
  • Oil for frying500 ml

Instructions

Cool the cooked risotto completely; it should be thick and hold its shape well.

Cut the mozzarella into cubes and prepare flour, beaten eggs, and breadcrumbs.

Take a portion of rice, place a piece of mozzarella in the center, and shape into a firm ball.

Coat the ball in flour, dip it in egg, then cover well with breadcrumbs.

Fry the arancini in hot oil until evenly golden.

Drain on paper towels and serve hot with tomato sauce.
