Ashлян-фу
A cold Dungan-Kyrgyz dish with noodles, starch jelly, and a spicy-sour sauce.

Istruzioni
From starch and water, cook a thick gel, pour into a mold, and cool until set.
Boil the noodles, rinse with cold water, and set aside.
Beat the egg, fry a thin crepe, and cut into strips.
Mix vinegar, soy sauce, garlic, chili, and a little water to make a spicy-sour sauce.
Cut the starch jelly into strips and the cucumber into matchsticks.
Place the noodles, jelly, cucumber, and egg in a bowl, then pour the sauce over everything.
