Cut the potatoes into very thin matchsticks and fry until crispy or bake with oil.

Boil the cod for 5–7 minutes or steam it, then flake it apart.

Slice the onion into half-rings and slowly sauté in olive oil until soft.

Add the cod and potatoes, and gently mix together.

Beat the eggs with salt and pepper, pour into the pan, and cook for 1–2 minutes so they remain tender.

Remove from heat, add parsley and olives, and serve immediately.
