
Red Lentil Soup
A hearty red lentil soup with lemon and cumin — ready in 30 minutes
Ingredienti

- carota2 pz
- aglio3 spicchi
- brodo o acqua1200 ml
- cumino macinato1 cucchiaino
- curcuma0.5 cucchiaino
- limone1 pz
- olio d'oliva2 cucchiaio

- coriandolo15 g
Istruzioni
Dice the onion and carrot; sauté in oil for 5 minutes.
Add minced garlic, cumin and turmeric; fry for 1 minute.
Add the rinsed red lentils; cover with broth or water (1:3).
Bring to a boil, reduce the heat; cook for 20 minutes until the lentils are soft.
Blend the soup with an immersion blender to the desired consistency.
Season with lemon juice and salt, and serve with crusty bread and cilantro.
